Once again it's time for Colors on Monday hosted by Jen at Unglazed. If you want to play along just click on the link on my side bar. Today's color is green! One of my favorite herbs is cilantro. I think most people either love it or hate it, there is no in-between. Since hubbie and I love salsa I enjoy making it almost as much as eating it. Here's my easy recipe.
1 lg. can of crushed tomatoes or you can use chopped fresh
Juice of 1 lime
Medium chopped onion
Chopped cilantro-use as much as you like
Chopped fresh jalapeno peppers-I use 2-3. If you scrape out the seed and the white membrane they won't be as hot.
Salt to taste. Sometimes I have been known to throw in chilli powder or accent.
After mixing it all up I let it refrigerate for a couple of hours.
We love it and I hope if you try it, you will too.
Happy Green Monday to you!

Been wondering about you....has the firespike began blooming yet? Mine has, seems kind of slow this year. Cilantro is okay with me.
love cilantra....great green post
I just made some salsa last week --even my daughter proclaimed it was good! I used a similar recipe, but I might use less cilantro next time, because I don't like foods too spicy. This is a great way to use up some of those excess fresh tomatoes from the garden.
Happy Green Monday Susie-
I've never made salsa and it's one of my husbands favorites recently. I will give this a try for sure~thx!
Have a great week
We love cilantro! Thanks for the recipe. Our favorite Mexican restaurant uses lots of cilantro in their salsa and it's so good. Have a great Monday.
We LOVE salsa at the Wallace house!!
I must confess I have no idea what cilantro tastes like! I need to try it because I see it used in lots of recipes. Nice green post!
Fresh salsa is soooooo good!
Thanks for the recipe.
Do you have any luck growing cilantro? It bolts long before I can use it!
I love Cilantro! The salsa recipe sounds really good, homemade salsa is the best.
Hi Susie, Happy GREEN Monday to you... I like cilantro--but it has to be MILD. I cannot eat too many things which are hot and spicy anymore... BUT--I love Mexican food.
Great post..
Hugs,
Betsy
Looking forward to trying the salsa recipe. Thanks for sharing. Happy Green Monday!
Love your fresh green you picked this week.
That looks like a yummy recipe, full of good green cilantro. Thanks for the recipe! Hope you had a great Monday, whether it was green, or not.
mmmm... salsa! I love salsa. Thanks for the recipe. I bet it tastes better than jar salsa!!
Hi Susie! I'm not a big fan of salsa, but my husband loves it. I bet he'd like this recipe too. Happy Monday to you. :D
nice! love cilantro and also making homemade salsa! now i want some...rats!
good green post!!
Salsa is my favorite treat to eat...and cilantro is my favorite herb. You hit the spot today. :)
I'm with you on that one - cilantro adds that special something to salsa, red or green.
I just love cilantro. I think it brightens up the flavor, and give whatever you are making a fresh green taste. Yum! That looks like a good salsa recipe
The salsa sounds delicious! This is a wonderful post -- not only do we get a good picture, we get a good snack.
Cilantro. I remember the 1st time I tasted it. Thought the salsa had gotten some dish soap in it!! Now I love the flavor. Good green post & thanks for the recipe.
I've no idea what that would taste like but I would love to have a taste of it.
Thanks for sharing your favorite salsa recipe. Sounds yummy! :)
Oh yum!

Love me some cilantro!!!!!
Could I use parsley instead? I am not a huge fan of Cilantro.
Thanks for sharing this recipe.
That is about how we like our salsa, Susie. Can never get enough of this ...
Have a beautiful holiday weekend.

Hi Susie, Stopping by to wish you a safe and happy Labor Day Weekend!
P.S. You will never guess what my word verification is: weedog
Didn't Jed Clampett on Bev. Hillbillies say "Wee Doggies!?"
Hi Susie,
I'm glad I had my sound on. It was cool to hear, "Oh, how he loves us..." as I was reading your post.
I'm one who acquired a taste for cilantro. I think when I first started growing it, I used it when it was blooming, not realizing it got stronger then. For the last few years, I've had a nice volunteer crop of cilantro. I'm waiting for the next batch to come up. I hope it does yet this fall.
Your salsa recipe looks good.
Susie, just made guacamole last night and with lots of cilantro, some garlic, onion, fresh tomatoes... ummmm. The problem I have with cilantro is that it bolts so quickly; I found a new variety that I'll try next year that "supposedly" is slower to do so. We'll see. Have a wonderful week.
