Colors On Monday-Green

Once again it's time for Colors on Monday hosted by Jen at Unglazed. If you want to play along just click on the link on my side bar. Today's color is green!One of my favorite herbs is cilantro. I think most people either love it or hate it, there is no in-between. Since hubbie and I love salsa I enjoy making it almost as much as eating it. Here's my easy recipe.

1 lg. can of crushed tomatoes or you can use chopped fresh

Juice of 1 lime

Medium chopped onion

Chopped cilantro-use as much as you like

Chopped fresh jalapeno peppers-I use 2-3. If you scrape out the seed and the white membrane they won't be as hot.

Salt to taste. Sometimes I have been known to throw in chilli powder or accent.

After mixing it all up I let it refrigerate for a couple of hours.

We love it and I hope if you try it, you will too.

  3. I just made some salsa last week --even my daughter proclaimed it was good! I used a similar recipe, but I might use less cilantro next time, because I don't like foods too spicy. This is a great way to use up some of those excess fresh tomatoes from the garden.

  11. Hi Susie, Happy GREEN Monday to you... I like cilantro--but it has to be MILD. I cannot eat too many things which are hot and spicy anymore... BUT--I love Mexican food.

  20. I just love cilantro. I think it brightens up the flavor, and give whatever you are making a fresh green taste. Yum! That looks like a good salsa recipe

  22. Cilantro. I remember the 1st time I tasted it. Thought the salsa had gotten some dish soap in it!! Now I love the flavor. Good green post & thanks for the recipe.

    I'm glad I had my sound on. It was cool to hear, "Oh, how he loves us..." as I was reading your post.

    I'm one who acquired a taste for cilantro. I think when I first started growing it, I used it when it was blooming, not realizing it got stronger then. For the last few years, I've had a nice volunteer crop of cilantro. I'm waiting for the next batch to come up. I hope it does yet this fall.

  31. Susie, just made guacamole last night and with lots of cilantro, some garlic, onion, fresh tomatoes... ummmm. The problem I have with cilantro is that it bolts so quickly; I found a new variety that I'll try next year that "supposedly" is slower to do so. We'll see. Have a wonderful week.
